This is a classic side dish we have at home and one my kids can’t do without.
Rustic Potato Pie
- 2 kilos potatoes (sliced into shoe strings or julienned)
- 1/4 cup olive oil (add more if needed)
- 2 tbsp. butter
- 1 or 1.5 cups cooking cream
- 1/2 tsp. nutmeg
- salt & pepper to taste
- 1 cup mozzarella cheese
- 1 cup cheddar cheese
- a sprinkling of parmesan if you’re feeling wicked
Sauté potatoes in olive oi and butter in a skillet that is also oven safe. Season with salt, pepper and nutmeg. Add cooking cream when potatoes are half cooked then cook through till softened. Remove from fire and sprinkle all cheeses on top, evenly. Then put inside a 350 degree pre heated oven and bake till golden brown. Slice and serve!
